Where’s the Shrimp Cocktail & Kimchi Shooter!?


Greetings, Pea Shoots. After the third conversation at a dinner party I feverishly start peeking over the shoulders of the guests, like I’m looking for a late train.  I scan the appetizer spread in search of the tastiest classic appetizer on earth – shrimp cocktail.

Shrimp Cocktail and Kimchi Recipe, Dresses & Appetizers

When I spot the shrimp tails, it can be a hit or miss. Miss = a messed up mound of shredded shrimp with no flavor. Hit = clever-plated, flavorful  jumbo shrimp with a creative cocktail sauce — if you like the sound of that and want to save a buck,  I’d like you to meet Homemade Jumbo Shrimp Cocktail with Kimchi Shooters. Here’s how the story goes…

Serves 15

3 lb Jumbo Shrimp
1 Bay Leaf
1 tsp Peppercorn
Kosher salt, to taste
Pea Shoot, garnish
1/2 Cup Kimchi liquid
1 tsp Lemon Juice
1 tsp Horseradish liquid
1 1/2 Cups Tomato juice
1 tsp Tabasco sauce
1/2 tsp Worcestershire Sauce

Peel and devein the shrimp, tails on. Place a cooling rack over a tray.

In a large pot of simmering salted water, add a bay leaf and peppercorns. Simmer for 10 minutes. Once the water has flavor, add the jumbo shrimp, in batches of 10 – 15. Cook until pink, about 5 minutes. Remove the shrimp to the cooling rack and repeat until all of the shrimp are cooked.

For the Kimchi cocktail sauce:
Strain the kimchi liquid into a bowl. Add lemon juice,  tomato juice, Worcestershire, Tabasco, and horseradish liquid to the kimchi. Add cool water to thin the juice out as desired, no more than 4 Tbsps. Whisk together and set aside for 30 minutes for flavors to blend.

Shrimp Appetizer Plating: Place the a little kimchi cocktail sauce in a shot glass, add the shrimp cocktail on the side and garnish with a long stemmed pea shoot. Enjoy!

      Howdy Sean,
      Shrimp cocktail is happier with this Kimchi twist. Here’s a Shrimp cocktail- cocktail tip: you can always spice up the shot with a little vodka or replace it with a bloody mary.

    Oh I love shrimp cocktail. My girlfriend and I were just talking about our love of apps and that we actually look forward to that part of the meal than the main one:)

      Hi Ang,
      A full spread of apps — shrimp on potato pancakes, fennel sliders, fried artichokes and mussels, can definitely be better than a big meal. Though, I just saw your website and love your last chili recipe. Maybe I can make that into an app, hmm…
