Chicken Alfredo Appetizer on Garlic Crostini Recipe
Garlic crostini
1 Small baguette
1 Garlic clove1 Cup olive oil
Chicken alfredo
1 Bay leaf
3 Garlic cloves
Bunch of thyme
1 Tbsp peppercorn
1 Skinless chicken breast
Alfredo Sauce
Kosher salt and freshly ground black pepper
1/2 lb. of thawed, boiled Peas
Preheat oven to 350.
Garlic Crostini
In a blender, place olive oil and garlic clove, blend until smooth, about 3 minutes.
Slice a small French baguette on a bias and place on a baking sheet. Brush garlic olive oil on the baguette and bake until crisp and golden, about 5 minutes. Remove from oven and sprinkle salt on top.
Chicken Alfredo
Fill a medium pot with water; add salt, bay leaf, 2 smashed garlic cloves, thyme, peppercorns and bring to a low simmer. Add chicken breast and poach until cooked through, about 8 minutes. Remove chicken and let cool. Thinly slice into pieces slightly smaller than the bread.
Plating: Add alfredo sauce on top of the garlic crostini. Add a slice of chicken. Drizzle alfredo sauce on the chicken and top with a trio of peas. Enjoy!
