Small Plate: Sweet Potato & Apple Hash


Sweet potatoes and apples make a savory side dish for winter dinners. Mix granny smith apples with sweet potatoes, raisins, and onions and enjoy a warm, happy meal.

Apple and Sweet Potato Hash
serves 6
2 Granny Smith apples, peeled, cored and cubed
2 Sweet potatoes, peeled and cubed
½ Cup Raisins
4 Tbsp Butter
Cinnamon, to taste
¼ Cup White Wine
¼ Cup White Onions, small dice
Kosher Salt and freshly ground black pepper, to taste

1. In a medium pot, simmer sweet potatoes in water, until slightly fork tender yet firm, about 8 – 10 minutes. Drain and set aside.

2. In a large pan, saute onions in 2 Tbsp butter. Add 1 Tbsp of butter. Add apples, season lightly with cinnamon. Cook apples until fork tender, about 4 minutes.

3. To the apples and onions, add 1 Tbsp of butter, raisins, sweet potatoes and season lightly. Add wine and cook for about 3 – 5 minutes. Plate and enjoy.

    Mmm, yum! Sweet potatoes and apples would make a great combination. I love cooked apples, very much a comfort food!
