Cooking Questions and Answers: Ask - Dresses & Appetizers

    I broil lamb a lot and want a new way to cook it. Make it more exciting…

      Greetings, Stephen VA,
      Try an herb-crust on your lamb. Cook panko (Japanese breadcrumbs) in a little butter until lightly golden. Mix dry herbs with the panko and add it on top of your lamb for the last few minutes of cooking.

      Make a sauce with the lamb by seasoning the lamb with salt, adding oil to a hot pan and searing the lamb until it gets a nice crust, about 1-2 minutes a side. Remove the seared lamb to a baking dish and place in the oven to finish cooking. Add white wine to the pan and scrape up the brown bits from the bottom of the pan. Add herbs and little bit of beef, chicken or vegetable stock and season to taste. Simmer the sauce until it gets slightly thickened then serve on side of your herb-crusted lamb. And to make it even more exciting, cook a vegetable side dish that you’ve never tried before.

    Other than Halloumi what cheese can be grilled?

      Howdy, Carol!
      Thanks for the cheese grilling question. I got a little help from the best cheese shops in NYC and they recommended 2 delicious cheeses to grill – fresh mozzarella cheese and bread cheese.

      Fresh mozzarella was recommended by Saxelby Cheese Mongers and Murray’s Cheese because mozerella tightens (rather than loosens) when exposed to heat. Murray’s Cheese also highly recommends grilling bread cheese a.k.a Leipäjuusto, they said, bread cheese is meant for grilling. Enjoy!

      Update: Here are more cheese recommendations for the grill, from my good friend, Diana Chiodi from Artisanal Cheese – “The French have mastered the art of grilling cheeses with their Raclette cheese. There is even a raclette grill made specifically for this “event” which they logically call a “raclette party”. It is a semi firm cheese and rather stinky (but who care about stinky cheeses when they are just so delicious?!). The fancy French love to serve their grilled raclette over boiled potatos, smoked hams and other accoutrements… Which brings me to my next suggestions – basically, anything cheese in the semi firm category is perfect for grilling. This is because these kinds of cheeses have just enough fat to make it melt but are dry enough to hold it all together.”

    Here’s a challenge: Broccoli!! America’s most dreaded vegetable! 😛

      Hi, Muhammad,
      Broccoli is delicious, my friend, especially when fried. Try a light and crunchy vegetable tempura. Coat the broccoli and a medley of your favorite veggies in the batter, fry it, then top it with chocolate sauce ( 🙂 just kidding about the chocolate). Try this recipe for vegetable tempura and rekindle your love for broccoli –

      More Broccoli Ideas To Try…
      1. Broccolini (japanese broccoli) is more delicate with thin, long stalks and small, light florets. It tastes sweeter and is delicious when simply sautéed in chicken stock and minced garlic.

      2. Broccoli and cheese are a delicious tag team, try it in mac and cheese, place broccoli in your cheese omelet or simply make a cheese sauce (recommend gruyere) and dip your vegetables in it.

      3. Chicken and broccoli stir fry is a classic movie night comfort food; place it in chinese cartons and curl up with a good movie.

        Wow. You’re good. Tempura is delicious. That sounds pretty damn good.

        I especially love the Chicken & Broccoli for movie night. (I’m a huge film buff so fits me perfectly.) And the “sautéed in chicken stock and minced garlic” idea just has my mouth watering.

        Once again, wow. I’m impressed. 🙂

    Hey Brandon, I have very little experience cooking , so excuse me if this sounds like a crazy request . Is it a culinary abomination to combine barbeque sauce and salmon ( two of my favourite things) ? Any ideas how I could make that work ? 🙂

      Greetings, ZBrown,
      BBQ salmon isn’t an abomination it’s a crazy-good recipe!

      Try a carolina BBQ Rub; it’s not too salty, slightly sweet and will work well with salmon. Mix these ingredients to taste: salt, pepper, chili powder, ground cumin, brown sugar, granulated sugar, cayenne pepper, paprika.

      Add the BBQ Rub to the salmon. Wipe a grill or grill pan with canola oil and heat to medium high heat. Grill the salmon, then flip, once you flip the salmon, add BBQ sauce on top and enjoy! BBQ salmon would go well with some sweet potato fries and big salad.
