Mini Bites: The Sunny Side of Salmon Croquettes & Quail Eggs


The art of making brunch appetizers is as popular as playing an 8 track. Dinner menus are bursting with creative appetizers and clever canapés, even lunch menus have an amuse bouche or 2 but our breakfast and brunch menus get gypped. I say, “No more!” I took 2 breakfast favorites – salmon croquettes and eggs – sunny side up  (made it artsy with photoshop) and designed/cooked a brunch appetizer recipe for you, brunch lovers.

Salmon Croquette Recipe Inspiration: My Dad is a grill master and great hand dancer but has a hidden talent – he makes the best darn salmon croquettes known to mouths.  Here’s something he’s passed on to me (besides his skinny chicken legs), it’s a delicious salmon croquette recipe. I’ve shrunk the croquettes, of course, and placed a quail egg on top to create the Mini Salmon Croquette with Sunny Side Up Quail Egg Appetizer. Thanks, Dad.

Invite your friends, pour a few Bloody Marys and start the weekend with an artsy salmon croquette appetizer. Enjoy.

Salmon Croquette and Quail Egg Appetizer Recipe

Makes 15 mini Salmon Croquettes

Salmon Croquette and Quail Egg Ingredients

1 Can salmon, drained
¼ Red onion, small dice
1 Egg, beat
1/4 Cup breadcrumbs
15 Quail eggs
Canola oil for sautéing
Kosher salt and freshly ground black pepper, to taste

Basil Champagne Vinaigrette Ingredients

4 Sprigs of thyme, leaves picked
1 Bunch of basil
1 Cup olive oil
1/3 Cup of champagne vinegar
1/2 Shallot, small dice
2 Cloves garlic
1 Plum tomato
Kosher salt and freshly ground black pepper, to taste

Basil Champagne Vinaigrette Recipe
1. Combine champagne vinegar, garlic, shallots, 2 sprigs of thyme leaves and seasonings. Slowly whisk in the olive oil. Taste and adjust seasoning. Blanch basil (add to simmering water for 30 seconds then place in ice-water) and steep in vinaigrette for 30 – 60 minutes.

2. Peel and seed tomatoes. Dice tomatoes and marinate in champagne, basil vinaigrette. Set aside.

1. Beat egg and drain canned salmon. Mix salmon, breadcrumbs, red onions, salt and pepper to taste , then add eggs until well combined. Once moist but not sticking to hands, form into small discs.

2. Place a large sauté pan on medium heat. Once pan is warm, add canola oil to coat the pan and let the oil warm. Add salmon croquettes and sauté until golden brown, about 3 minutes per side. Place salmon croquettes on a paper towel lined-plate. Wipe out pan and use for sunny side up quail eggs.

Cracked Quail Eggs

1. Place the sauté pan on medium heat. Add oil to coat the pan. Once the oil gets warm add quail eggs and cook until white has set, about 3 minutes. Season lightly with salt and pepper.

Place salmon croquettes on a platter. Add quail eggs on top. Top quail eggs with marinated tomatoes and garnish with thyme leaves.

You can freeze the salmon croquette patties. Simply defrost before sautéing. Quail eggs may be found at some specialty stores, Whole Foods and Farmers markets.
